6 large onions, halved & thinly sliced
1 cup white vinegar
3/4 cup balsamic vinegar
2 cups brown sugar

Saute onions in a little light oil over a slow heat until soft. Add vinegars and sugar and reduce until required thickness.

If doubling quantity, add another 1/4 cup brown sugar.
