1 large tin 3 or 4 bean salad mix 1 tin green beans 1 finely chopped onion (red or white) 1/2 cup finely chopped celery 1/2 cup finely chopped capsicum (any colour) 1/2 cup caster sugar 1/2 cup canola or other light oil (not olive) 1/2 cup vinegar (white wine, red wine or malt) Salt & ground black pepper (to taste)
Drain and rinse beans. Combine all ingredients and leave to marinate. Best made day before.
