500g mixed dried fruit
1 cup brown sugar
125g butter
1 small can crushed pineapple
2 eggs
1 cup plain flour
1-1/4 cups self raising flour
1 teaspoon mixed spice
1/4 teaspoon carb soda

Directions:
Directions:
Place fruit, sugar, butter & pineapple (including juice) into a saucepan. Heat & simmer 5 mins. Allow to cool. Lightly beat eggs and star into fruit mixture. Sift both flours, spice & soda and fold into mix. Place into greased and lined cake tin and bake moderate oven for about 1hr 15 minutes. Test after 1 hour.
