2 10-oz. pkg. frozen chopped broccoli, cooked & drained
2 cup cooked rice
1 8-oz. jar processed cheese
1/4 cup butter
1 cup chopped onion
1 small can mushrooms
1/2 can milk
1 cup celery chopped
1 can cream of chicken soup (or mushroom)
Salt and pepper to taste

Preheat oven to 350
In a buttered 2 qt. casserole dish, combine broccoli and rice Stir in half cheese spread. Melt butter and saute onion and celery until translucent. Stir in soup, milk, and season to taste. Pour over rice and mix well. Top with remaining cheese. Bake at 350 for 30 minutes OR, if refrigerated, 50-60 minutes at 375.
