1/2 cup elbow macaroni
Kosher salt and freshly ground pepper to taste
1 can imported tuna, packed in olive oil
1/4 cup cubed sweet red pepper
1/4 cup finely chopped red onion
1 egg yolk
2 teaspoons dijon mustard
1teaspoon white wine vinegar
1/2 teaspoon Worcestershire sauce
Dash of tabasco
1 cup extra-virgin olive oil
1 tablespoon finely chopped parsley

Directions:

1. Drop macaroni into 4 quarts boiling salted (1Tsp) water.
Boil about 7-9 minutes or until tender. Do not overcook.
Drain well. Run cold water over the macaroni and drain thoroughly.
2. Put the macaroni into a mixing bowl. Drain the tuna and break into 1-inch pieces. Add to the bowl.
3. Add pepper cubes and onion.
4. Put the yolk in a small mixing bowl and add mustard, vinegar, Worcestershire sauce, tabasco, salt and pepper to taste. Stir rapidly with a whisk and gradually add oil. When thickened to a mayonnaise add some to the macaroni mixture (you will not need all of the mayonnaise). Add the parsley and fold to blend.
Garnish with hard-cooked egg slices and avocado.
