1 c. chopped fresh mushrooms 1/2 c. chopped onion 2 c. chicken or beef broth 3/4 c. long grain rice 1 tbsp. butter 1 tbsp. parmesan chs.
In a medium saucepan cook mushrooms, rice and onion in butter until onion is tender and rice is lightly toasted. Carefully add broth to skillet bringing to a boil; reduce heat. Cover and simmer for 15 - 20 minutes or until rice is tender. Stir in cheese. Cover and let stand 5 minutes before serving.
