2 tbsp. minced onions
1 tsp. basil
2 c. lg. cottage chs.
1/2 c. parmesan chs.
1/4 c. chopped parsley
1/2 tsp. salt
1/4 tsp. oregano
1 c. monterey jack chs.
12-16 manicotti shells

Tomato Sauce: Saute 1 lg. onion (chopped) and 1 sweet red bell pepper in 3 tbsp. olive oil until tender. Mix in 2 garlic cloves, 1 28oz. can tomatoes, 1 tsp. each salt and sugar and 1 tbsp. basil leaves. Bring to a boil, cover and simmer 20 minutes. Uncover and cook, stirring occasionally about 10 minutes until sauce is reduced to about 1 quart.

Spoon 1 cup of tomato sauce into a greased 13x9 baking dish. Mix ground beef, parsley, onions,salt, herbs, cottage cheese, Jack chs. and 1/4 c. parmesan chs. Divide mixture into 12-16 equal portions. Stuff uncooked manicotti shells with it. Place filled shells in baking dish. Pour remaining parmesan chs. Cover tightly with foil.

Bake at 350º until manicotti are tender, about 1 1/4hrs. Uncover and bake 5 minutes until lightly brown. Serve sprinkled with additional parmesan chs.
