2 cups currants 1 cup butter 2 1/2 cups brown sugar; 3 eggs 1/2 tsp vanilla 1 cup chopped walnuts, almonds or coconut
Cream butter and sugar. Add well-beaten eggs and combine with creamed ingredients. Add currants and choice of nuts or coconut. Place mixture in pastry-lined muffin tins. Bake in hot oven 425º F for 20 to 35 minutes.
