1-1/2 cups orange juice
2 tsp heavy whipping cream
5 Tbsp unsalted butter, cut into small pieces
12 jumbo sea scallops
Olive oil
Salt & pepper

Directions:
Directions:
Simmer orange juice in small saucepan over moderate heat for about 25 minutes or until reduced to 1/3 cup. Add cream and return to a gentle simmer. Remove from heat. Add butter a few pieces at a time while constantly whisking until blended. Season with salt and pepper to taste.

Place large saute pan over high heat for 2 minutes. Season scallops with salt and pepper. Drizzle 1 tablespoon olive into hot pan. Add scallops Sear scallops about 2 minutes on each side or until they are just opaque in the center and golden brown on both sides.
