1 1/2 c. flour
1/2 tsp. baking soda
1/8 tsp. salt
1 c. mashed bananas
1/4 c. oil
1 1/4 tsp. baking powder
1/2 tsp. cinnamon
2 slightly beaten egg whites
3/4 c. sugar

Directions:
Directions:
In a medium mixing bowl stir together flour, baking powder, baking soda, cinnamon and salt. In a large bowl stir together egg whites, banana, sugar and oil. Spray an 8 x 4 x 2 inch loaf pan with nonstick spray coating. Spread batter in prepared pan. Bake at 350º F for 45-50 minutes or till toothpick inserted near the center comes out clean. Cool bread in the pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack. For easier slicing, wrap the bread in plastic wrap and store overnight.
