4 chicken breast
1 lg. egg
3/4 c. sliced almonds, finely minced
1/4 c. grated parmesan cheese
2 tbsp. olive oil
2 tbsp. unsalted butter

salt and freshly ground pepper
flour for dredging
lemon wedges

Directions:
Directions:
Place chicken breast halves between 2 sheets of plastic wrap and lightly pound to an even 1/2 inch thickness. In a shallow bowl, beat egg and add the seasonings. On a plate, combine almonds and parmesan cheese. Heat oil and butter in a skillet large enough w/o them touching. Dust chicken in flour and dip egg and then in almond mixture to coat completely. Brown in skillet until golden brown, about 1 1/2 minutes.
