2 c. oats
2 c. sour cream
2/3 c. butter or margarine, melted
4 eggs
2 c. light brown sugar, packed
2 c. flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. salt

Directions:
Directions:
Combine oats and sour cream. Stir in melted butter, eggs and brown sugar until well mixed. Sift together flour, baking powder, soda and salt. Stir into oat mixture just until blended. Divide into 2 greased 12-cup muffin pans. Sprinkle lightly with more oats, if desired.

Bake at 375º 20 to 25 minutes or until muffins test done. Turn out onto wire rack. Makes 2 dozen.
