3 eggs, separated
2 tsp. sugar
1/2 tsp. salt
2 c. each buttermilk and flour
1 tsp each baking soda and baking powder
Cooking oil
Applesauce
Powdered sugar

Directions:
Directions:
Beat egg yolks in mixing bowl; add sugar, salt and buttermilk. Sift flour, soda and baking powder together and add to yolks. Beat egg whites until stiff and fold into the batter. Place a small amount of oil in the depressions, or well, of the aebleskiver pan and fill them 2/3 full of the batter.

Place a teaspoon of applesauce on top of batter then cover with another dab of batter. Cook on top of stove until golden; turn carefully and cook until golden on the other side. Roll in powdered sugar and serve hot. Continue making them as long as your guests can eat 'em. Makes 3 dozen.
