1 c. boiling water
2 c. All-Bran
2 1/2 tsp. baking soda
2 c. plus 2 T buttermilk
1/2 c. shortening
1 c. sugar
2 1/2 c. flour
1/2 tsp. salt
2 eggs, lightly beaten
1 1/2 c. raisins

Directions:
Directions:
Pour boiling water over All-Bran; cool. Dissolve baking soda in buttermilk. Stir and set aside.

Cream shortening and sugar until light. Stir in flour and salt. Quickly mix in eggs and buttermilk mixture, then bran mixture and raisins. Fill paper-lined muffin cups 2/3 full. Bake in preheated 375º oven 20 minutes. Batter stores well in refrigerator. Makes 2 1/2 to 3 dozen muffins.
