15 oz can black beans, drained
16 oz can niblet corn
2 tomatoes peeled, seeded and diced
1 bell pepper, red or green, diced
4 green onions, sliced
3 Tbsp minced cilantro or parsley

2 Tbsp red wine vinegar
1/2 tsp ground cumin
1/8 tsp red pepper flakes
3 Tbsp olive oil
Salt and pepper to taste

Directions:
Directions:
Mix black beans, corn, tomatoes, bell pepper, onions and cilantro.
Mix remaining ingredients and pour over bean mixture.
Chill 4 hours or overnight.
