"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
One 4-41/2 Brisket of Beef 21/2 cups ketchup 3/4 cup prepared mustard 1/4 cup firmly packed brown sugar 1/2 cup water
Preheat oven to 350º
Place Brisket in large roasting pan that is coated with non stick vegetable spray. In a large bowl combine ketchup, mustard and brown sugar. Remove 1 cup of the sauce to a medium size bowl and add water to it. Mix well and pour around the meat in the pan. Pour remainder of sauce over the top of meat, making sure that some of it stays on top. Cover tightly with tin foil and bake for 3-31/2 hours or until meat is fork tender.
