1 Idaho potato, about 1/2 pound
3 carrots
1 tablespoon butter
1/4 cup finely chopped onion
Kosher salt and freshly ground pepper to taste
1/2 bay leaf
1 sprig of fresh thyme or 1/4 teaspoon dried
1 tablespoon finely chopped fresh parsley

1. Peel potato and cut into 1/2 inch slices. Cut each slice into 1/2 strips. Cut each strip into 1/2 inch cubes. There should be about 11/4 cups.
2. Peel carrots and cut them into cubes approximately the same size as the potatoes. There should be about 1/2 cup.
3. Heat the butter in a heavy saucepan over medium heat and add the onion. Cook stirring until wilted, 1-2 minutes.
4. Add the potatoes, carrots, broth, salt (remember the broth is salty), pepper, bay leaf and thyme. Cover closely and cook 20-25 minutes or until the vegetables are tender.
5. Serve sprinkled with parsley.
