1 1/2 c. dry Idaho Great Northern beans
1 smoked ham hock
1 medium potato, finely chopped
1 onion, chopped
1/2 c. celery, chopped
1 clove minced garlic
salt and pepper to taste

Directions:
Directions:
Soak beans overnight in 1 quart water. Drain beans and measure water, adding enough water to make 2 quarts. Place water and ham hock in kettle. Cover and simmer 2 hours. Add potato, onion, celery and garlic. Simmer 1 hour. Remove ham hock and cut up meat. Remove 1 cup of beans and some liquid; place in blender. Return meat and puree to soup.
