2 eggs
2/3 cup shortening
1 pkg Betty Crocker sunkist orange cake mix
1/2 cup finely shredded carrots
1/3 cup raisins

Directions:
Directions:
beat eggs, shortening and 1/2 cake mix( dry) until smooth, stir in remaining cake mix, the carrots and raisins, drop by rounded tsp, about 2 inches apart onto ungreased cookie sheet
Bake @ 375 10-12 minutes
remove from cookie sheet immediately
substitute coconut for carrots if desired
