1 pkg dry yeast
1/4 cup water
3/4 cup warm milk
1/4 plus 1/8 cup instant mashed potato flakes
1/4 cup oleo softened
1/4 cup sugar
1/2 tsp salt
1 egg yolk slightly beaten
about 2 1/4 cup flour, divided
3 tsp ole melted

dissolve yeast in warm water in large bowl, let stand 5 minutes, combine milk, potato flakes, butter, sugar and salt, mix well, add to yeast mixture, mix well, stir in egg yolk and 1/2 cup of flour, cover and let rise for 30 minutes, batter will look spongy, gradually stir in enough remaining flour to make soft dough, cover and let rise one hour or until dough is double in bulk, punch dough down, turn onto lightly floured surface, roll out to 1/4 inch thickness, cut into 2 1/2 inch circles, brush each with melted butter, make crease across each circle and fold over gently press edges to seal, place on greased cookie sheet and let rise 20 minutes or until double in bulk
Bake @ 400 for 10 minutes or until golden brown
