1 gallon peeled and quartered roma tomatoes
5 cloves of garlic, crushed
1 cup. white vinegar
1/3 cup sugar
1 large white onion, diced
5 tsp salt
1/2 tsp cayenne pepper
1 Tbsp chili powder
2 tsp cumin
1 Tbsp red pepper flakes
5 fresh jalapeno peppers, seeded and diced
5 yellow chilies, seeded and diced
1 can diced green chilies

Directions:
Directions:
slightly boil tomatoes to peel. Peel and quarter tomatoes and mix in a large pot with rest of the ingredients. Cook on med high until the pot boils, stirring frequently. Simmer for 2 hours or until it is as thick as you want. Pour mixture into Mason jars and seal with lids and rings. Put in water bath 2/3 full for 10-15 minutes at a boil.
