1 1/2 c. vegetable oil
2 c. sugar
3 eggs
3 c. flour
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped nuts
3 c. chopped fresh apples
2 tsp. vanilla

Mix sugar and oil in electric mixer. Beat at high speed for a minute; add eggs, beating each for 1 minute. Mix dry ingredients and add this to sugar mixture. Fold in vanilla, apples and nuts. This is a very stiff batter, but the apple juice thins it as it bakes. Grease and flour a bunt pan. Bake at 325º for 1 to 1 1/2 hours. Test with straw. Let cool on rack for 15 minutes before removing from pan. This cake keeps well. It can be frozen for several months if desired.
