1 can (14 1/2 ounces) diced tomatoes, undrained
1 package stuffing mix, for chicken
1/2 cup hot water
2 cloves garlic, minced
2 (13 ounce) cans chicken
1 teaspoon dried basil
1 cup shredded Mozzarella cheese

Directions:
Directions:
Mix tomatoes (with liquid,) stuffing mix, water and garlic, until moistened. Set aside. Place chicken in bottom of microwave safe baking dish. Sprinkle with basil and cheese. Top with stuffing mixture. Cook in microwave for 5 or 6 minutes, or until heated through.

Omit chicken from recipe to make a great side dish. Just put basil and cheese on top of stuffing before cooking.
