1 chicken cut into serving pieces (3 lbs) or 3 lbs chicken breasts with skin and bone.
3 tablespoons unsalted butter
2 whole cloves of garlic, unpeeled
1 large bay leaf
2 sprigs fresh thyme or 1/3 teaspoon, dried
1/3 cup white wine
1/3 cup water

1. Sprinkle chicken pieces with kosher salt and pepper. If using a whole chicken, make a gash on the underside (opposite the skin side) of each chicken leg. If using chicken breasts, remove heavy center bone, to facilitate cooking.
2. Heat 2 tablespoons of butter in a large heavy skillet over medium-high heat and add all the chicken pieces skin side down. Cook 5-7 minutes until golden brown and turn pieces.
3. Add garlic, bay leaf and thyme.
4. Reduce heat to medium and cook turning the pieces so they cook evenly for 12-15 more minutes.
5. Remove the chicken pieces to a hot serving platter and add the wine to the skillet. Cook over high heat, stirring to dissolve the brown particles on the bottom of the pan. Cook until wine is reduced by half.
6. Add the water and boil briskly for about 30 seconds.
7. Swirl in remaining butter, salt and pepper to taste.
8. Spoon the sauce over the chicken and serve with buttered thin noodles.
