2 skinless, boneless chicken breast halves
Kosher salt and freshly ground pepper to taste
12 frozen small white onions
2 tablespoons olive oil
1/4 pound mushrooms, left whole if small, otherwise sliced or quartered.
4 fresh basil leaves plus minced basil for garnish
1/4 cup dry white wine
1 tablespoon butter

Directions:

1. Sprinkle the breasts with salt and pepper.
2. Cook onions according to package directions until just defrosted and then drain.
3. Heat the oil in a large heavy skillet over medium-high heat and add the breast pieces. Cook about 30 seconds and then add the onions.
4. Cook about 10 minutes on medium heat, then turn the breast pieces. Scatter the mushrooms over all and cook 3 minutes.
5. Add the basil leaves, wine and butter. Cover and cook about 3 minutes.
6. Serve with onions and mushrooms in sauce spooned over. Garnish with minced basil.
