4 small red or Yukon Gold potatoes or 1 medium-sized Idaho potato
Kosher salt to taste
1 tablespoon melted butter
1 tablespoon finely chopped flat-leaf parsley

Directions:
Directions:
1. Peel the potatoes. If the potatoes are small and new, leave them whole. If they are large, cut them into 1 inch pieces.
2. Place the potatoes in a saucepan and add water to cover and salt to taste. Bring to a boil and simmer until the potatoes are tender when tested with the point of a sharp knife, about 10-15 minutes, depending on size.
3. Drain and pour melted butter over them. Sprinkle with parsley and toss.
