Ingredients: 2 fillets of fluke, sea bass or flounder, about 1 lb 11/2 tablespoons unsalted butter Kosher salt and freshly ground pepper 1 small onion 1 small carrot 1/2 cup thinly sliced leeks 4 sprigs flat-leaf (Italian) parsley 1/4 cup dry white wine 1/2 cup heavy cream

Directions:1. Preheat oven to 450º 2. Select an oven-proof baking dish just large enough to hold the fish fillets close together in 1 layer. 3. Rub the dish with 1/2 tablespoon butter. Sprinkle the bottom of the dish with salt and pepper. Arrange the fish in the dish and sprinkle with salt and pepper. 3. Peel the onion and cut in half cross-wise. Cut one half into crosswise into very think slices (1/4 cup). 4. Peel carrot. Cut into thin rounds. 5. Pluck off bits of parsley leaves to make 1/4 cup. 6. Heat remaining butter in a saucepan on medium heat.. Add the onion, carrot, leeks, parsley, salt and pepper (to taste). Cook stirring until vegetables are crisp-tender, about 3 minutes. 7. Add wine and cook about 1 minute over medium- high heat. 8. Add cream and cook over medium-high heat about 2 minutes. 9. Spoon the vegetables and sauce over the fish. Place the dish on the top of the stove and heat throughly. 10. Transfer the dish to the oven and bake 10 minutes. Serve with Boiled Potatoes with Parsley. |
