Swordfish with Italian Marinade Recipe

1 1/2 lbs. fresh swordfish stak
3 cloves garlic
1 tbsp. balsamic vinegar
4 tbsp. extra-virgin olive oil
1 tbsp. capers
1/4 c. finely minced red onion
1/2 c. packed, fresh basil leaves
1/2 c. packed, Italian parsley leaves
Juice of 1 lemon
salt & pepper to taste

1. Trim the skin off the swordfish and cut it into four equal portions. Put in a shallow glass dish.
2. Turn on a food processor and drop the garlic into the machine through the feed tube. when the garlic is finely minced, remove about half of it and mix with the balsamic vinegar and two tbsp. of the olive oil. Spread this mixture on both sides of the fish cover and marinate for two hours in the refrigerator.
3. Again turn on the food processor with the garlic still in it and add the capers onion, basil leaves and parsley through the feed tube. Drizzle in the remaining olive oil and the lemon juice. Transfer to a bowl and season to tast with salt and pepper.
4. Preheat a grill and lightly oil the grates. Grill fish over hot coals or hot gas fire, turning once, until seared on both sides and just cooked through, about 5 minutes on each side. Serve at once with the green sauce spooned on top of each portion
