4 tbsp butter
4 tbsp flour
2 cups flour
2 cups milk
2 tsp lemon juice
4 unbeaten egg yolks
2 pkgs (6 oz. each)
Parmesan cheese, grated
Lemon wedges

Directions:
Directions:
Preheat oven to 375 degrees. Melt butter in a saucepan over medium heat; blend in flour. Add milk all at once and cook, stirring vigorously, until sauce thickens. Reduce heat. Add lemon juice. Beat in egg yolks one at a time. Add crabmeat. Pour into 4 individual casseroles or ramekins. (To serve as an appetizer, pour mixture into 6 scallop shells.) Sprinkle each casserole generously with grated Parmesan cheese. Bake at 375 degrees for 15 minutes. Serve immediately, garnished with lemon wedges.
