6 1/2 cup flour
3/4 cup mashed potato flakes
2/3 cup sugar
1 tsp salt
1/2 tsp ginger
2 tsp vanilla
2 pkg active dry yeast
1 cup milk
1/2 cup water
1/2 cup margarine
1 cup pineapple juice, room temp
3 eggs

grease 3, 8 or 9 inch round cake pans. in large bowl combine 3 cups flour, mashed potato flakes, sugar, salt, ginger, vanilla and yeast. in medium pan heat milk, water and margarine until very warm (120F) add war liquid, pineapple juice and eggs to flour mixture, beat at low speed until moistened, beat 4 minutes at medium speed. by hand, stir in 3 cups of flour to form a stiff dough. on floured surface, knead in 1/2 to 1 cup of flour until smooth and elastic, about 5-8 minutes, place in greased bowl, cover with plastic wrap, loosely or towel. let rise until light and doubled in size,1-1/2 hours. punch down dough, divide into 3 parts, form into round balls. place in prepared pans, cover let rise until light and doubled in size, about 1 hour.
Bake @ 375 25-35 minutes
remove from pans immediately
