2 beaten eggs
2 tbsp flour
1/2 stick melted butter
1/2 cup sugar
1 tbsp brown sugar
3/4 cup milk
1/3 cup sour cream
1 tsp vanilla
1/4 box Jiffy Corn Muffin Mix
2 can's Green Giant creamed corn
1 small can Green Giant shoepeg corn

With a hand mixer, mix all ingredients and pour into buttered 2 quart baking dish. Bake in 325º oven for 45 minutes to 1 hour. Toothpick inserted in center should come out clean.

This is Matt and Rodney's favorite item I cook. I made up this recipe from many years of trial and error till it came out perfect. It took 2 years to discover the only canned corn to use is Green Giant, as other types make the pudding too watery.
