3 to 5 lb. beef chuck roast
4 large potatoes, peeled and quartered
Bag of baby carrots
1 large onion, peeled and quartered
3/4 c. beef broth or red wine
salt and pepper to taste

Directions:
Directions:
Season roast lightly with salt and pepper. Place potatoes, carrots & onion in crockpot. Place roast on top. Pour broth/wine over and around roast.

Cover and cook on low heat for 8 to 9 hours until roast & veggies are tender.
