1 Graham Crust Pie ( 9 in.) 20 oz. cream cheese ( 2 1/2 pkgs) 1/2 c. sugar 2 eggs 1 egg yolk 1 tsp. cinnamon 1 1/2 Tbls. flour 1/2 tsp. ginger 1/2 c. heavy cream 1/2 tsp. vanilla 8 oz. mashed pumpkin
Preheat oven to 210º F. Beat cream cheese, sugar, eggs, and yolk together. Add flour, cinnamon, and ginger; stir until smooth. Add cream, vanilla, and pumpkin. Beat until thoroughly mixed. Pour mixture into pie pan. Bake until center is firm; about 1 hour, 35 min. Let cool completely.
