10 Medium Potatoes
Salt
½ Cup Butter
½ Cup Flour
2 Cups Light Cream
¼ tsp. Pepper
4 oz. Monterey Jack Cheese
3 Tbs. Fresh Breadcrumbs

Directions:
Directions:
Boil potatoes with 1T Salt for 20-30 minutes
Drain, Cool, Peel, Dice

In a Saucepan over Medium Heat:
Melt ½ Cup Butter
Add ½ Cup Flour
Slowly stir in 2 Cups Light Cream
Stir until Smooth, remove from heat and cool.

Stir In:
2 tsp. Salt
¼ tsp. Pepper

Grease a 13 X 9 Inch Pan
Spread Potatoes in layer on bottom
Pour Sauce over Potatoes
Sprinkle with 4 oz. Monterey Jack Cheese and 3 Tbs. Fresh Breadcrumbs
Bake 30 Minutes @ 350º
