1/4 cup fat-free mayonnaise
1/4 cup low-fat sour cream
1/4 cup cilantro, chopped
1 teaspoon grated lime zest
1 lime, halved
1/2 teaspoon ground cumin
1/4 teaspoon ground red pepper
1 pound cooked chicken breast cut into bite-size pieces
1 can (15 ounce) black beans drained and rinsed
1 can (15 ounce) whole-kernel corn drained
1 red pepper diced
1/2 red onion, chopped
2 heads Bibb lettuce, separated into leaves, washed

In a large mixing bowl, combine mayonnaise, sour cream, cilantro, lime zest, lime juice, cumin and ground pepper
Stir in chicken, beans, corn, bell pepper and onion
Divide lettuce evenly among four plates and top with a portion of chicken salad
