2 1/2 cups of flour
1/2 tsp baking soda
1/2 tsp salt
1 3/4 cup sugar

1/2 cup shortening
1 egg
1 cup buttermilk
1 tsp vanilla
2 1/2 cups of rhubarb cut fine.

Directions:
Directions:
Mix flour, soda, salt, and sugar together.

Mix shortening, egg, buttermilk, vanilla, and rhubarb together for 4 minutes.
Add flour mixture.
Pour into 9X13 greased baking dish.
Sprinkle top with 1/2 cup sugar, 1tsp cinnamon, and 1/3 cup nuts, and 1 TBL butter.

Bake at 350º for 40 minutes.

I usually add the rhubarb last as it is hard to mix with flour.
