3lbs. chicken
2 med onions- chopped
2tbsp. curry powder
1c. tomato juice
1tbsp. lemon juice
rice

Toppings:
Parmesan cheese, chopped eggs, shredded cheddar cheese, raisins, sun flower seeds & peanuts.
Chopped veggies:
green pepper, cucumber, tomato, onion cilantro
Chopped fruit:
banana, mango/papaya, pineapple, apple, orange

Directions:
Directions:
Clean chicken and partially cover with water. Add salt. Simmer till chicken is tender. Drain and debone. Keep Broth. Fry onions in a little oil. Add curry powder and broth in small amounts or a time. Simmer for 5 minutes. Add rest of broth. Add tomato juice, lemon juice. Thicken with corn starch. Pour over cooked chicken. Simmer 20 minutes and serve.
