6 cups cubed and peeled butternut squash ( 1 1/2 inch cubes)
1 tbsp olive oil
1 1/2 tsp herbs de Provence
3/4 tsp kosher salt
1/2 tsp black pepper
2 onions cut into wedges

Directions:
Directions:
preheat oven to 425
place first 6 ingredients in a shallow roasting pan with cooking spray
bake for 30 minutes or until brown - check and stir while baking
serves 6 people
