1 head purple cabbage, sliced
1 head iceberg lettuce, sliced
1 bell pepper, julienned
1/4 cup vinegar
1 tsp. sugar
1/2 cup olive oil
1 clove garlic, chopped
Salt and pepper to taste
Small flour tortillas

Directions:
Directions:
Combine cabbage, lettuce, and bell pepper. In a separate bowl combine
vinegar, sugar, and garlic. Slowly whisk in olive oil until vinaigrette is
formed. Season to taste with salt and pepper. Spray tortillas and place in
cupcake tins, push down to form a cup shape. Cut down the tortilla edges if
they are too big. Bake in a 400 degree oven until brown and crispy. Toss
salad with vinaigrette and spoon into tortilla cups.
