1 pound fresh chorizo
3 cups water
2 Tbsp butter
1 package Zatarain's® Dirty Rice Mix
1/2 cup plain dry bread crumbs
1 roasting chicken (5 to 6 pounds)
1 teaspoon Zatarain's® Creole Seasoning

Directions:
Directions:
Cook chorizo in large skillet on medium-high heat until lightly browned. Drain fat; set aside. Add water and butter to same skillet; bring to boil. Stir in Rice Mix and chorizo; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes. Add bread crumbs; mix well.

2. Preheat oven to 350°F. Place chicken in foil-lined roasting pan. Sprinkle all over with Creole Seasoning. Stuff chicken with 3 cups of the rice mixture.

3. Roast 2 to 2 1/2 hours or until chicken is cooked through.

4. Place remaining rice mixture in separate baking dish. Cover. Bake 40 minutes or until heated through.

Ron and I love Chorizo this had great flavor and is a little different from traditional stuffing's. We make this recipe a lot and sever it with sweet potatoes.
