1 cup flour
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
2 eggs
1 stick butter, softened
3 large bananas, mashed
1 teaspoon vanilla
1/2 cup walnuts, coarsely chopped

Directions:
Directions:
Preheat oven 350º
Mix first 4 ingredients in a mixing bowl and whisk to combine
Cream butter and sugar until light and fluffy
Add eggs one at a time, beating well after each addition
Add dry mixture to cream mixture and stir until moistened
Pour mixture into a greased loaf pan or 3 mini-loaf pans
Bake 50 to 60 minutes or 30 to 40 minutes for mini-loaves
Cool in pan 10 minutes; invert to cooling rack
