2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons shortening, melted
1 egg
3/4 cup orange juice
1 tablespoon orange zest
1 1/2 cups fresh or frozen cranberries, coarsely chopped
1/2 cup nuts, chopped

Directions:
Directions:
Preheat oven 350º
In a small bowl, mix together first 5 ingredients
Stir in juice, zest, shortening and egg and mix until blended
Fold in cranberries and nuts
Turn into greased 9x5 inch loaf pan
Bake 55 minutes or until toothpick comes out clean
Cool 15 minutes and invert onto cooling rack

If using mini-loaf pans, reduce baking time. This recipe will produce 3 mini-loaves.
