Potato Soup Recipe

1 stick of butter (or margarine)
1 1/2 onion, sliced & chopped
3 potatoes, peeled & diced
4 cups of water (approximately)
1 can of chicken broth (optional)
salt & pepper to taste

Directions:
Directions:
melt butter, add onion. Cook just slightly.
Add about 4 cups of water, 1 tablespoon of salt and pepper to tate. Add diced potatoes. Bring to a boil.

If desired, add one can of chicken broth and bring it all to a boil. Let soup simmer. Lastly, add dumplings. Let dumplings cook in the soup for at least 10 minutes or so.

Once you add the dumplings at the end, the soup will thicken a bit. You can also add about 1/2 cup of diced celery to the soup if you'd like.
