2 medium onions
2 tbls bacon drippings
3 lbs lean beef(sirloin tip) 1 1/2 inch cubes
1 1/2 tbs flour
1 cup beef boullion
1 1/2 cup dry red wine
1/2 teasp each marjomam and thyme
1/4 teasp each oregano and pepper
salt to taste
1 lb fresh mushrooms, sliced lengthwise
1/4 cup butter

In a heavy skillet saute onions in bacon drippings until transparent (5 minutes)Remove from pan. Shake cubes and flour together in paper bag until meat is well coated Brown meat in bacon drippings. Add 3/4 cup bouillion , 1 cup red wine, herbs and seasonings and simmer 1 1/2 hour gradually adding remaining bouillion and wine.
Saute mushrooms in butter and add with the sauted onions and cook about 20 minutes longer.
Serve with long grain and wild rice.
