3 pounds russet potatoes, pricked with fork
1/4 cup butter
1/2 cup milk
3/4 cup whipping cream
3 ounces gruyere cheese grated
3 tabls freshly grated parmesan
Bake potatoes at 400 degrees for 1 hour until easily pierced with fork. Remove from oven. cool slightly and halve length wise. grease 9 by 13 baking dish Scrape out potatoe flesh mash with electric mixer add butter and milk and stir until blended. Spread in prepared pan. Increase oven temp to 500 degrees. Whip cream to stiff peaks and fold in gruyere by hand. Spread over potatoes and sprinkle with parmesan. Bake until thoroughly and topping is golden brown, about 10 minutes.
