1 12 oz pk regular Jimmy Dean Sausage
1/4 lb Fresh mushrooms sliced
1 med onion chopped
pepper
1/2 cup LaVictoria salsa supreme
8 oz velveeta cheese
8 oz med cheddar cheese sliced
8 oz mozzarella cheese sliced
3 tabl sour cream

Saute crumble sausage, mushrooms, and onion with pepper. Drain well on paper towels. Combine eggs and sour cream in blender for 1 minute. Pour eggs in greased 7 1/2 by 11 1/2 inch baking dish. Bake at 400 degrees Bake at 400 degrees for 8 to 10 minutes, until set in middle. Spoon salsa over eggs and add sausage mix. Layer the 3 cheses beginning with the velveeta. Casserole may be frozen or refrigerated at this time. Bake uncovered at 300 degrees for 45 minutes. Remove from oven and let sit for 5 to 10 minutes. Serve with Cinnamon Gems and berries.
