4 Belgian endives
1/2 cup crumbled blue cheese
1/4 cup chopped walnuts
1/4 cup walnut oil
1/8 cup Balsamic vinegar
Pinch of dried thyme
Salt & pepper to taste

Directions:
Directions:
- Rinse and slice endives into 1/2 inch slices
- Add rest of ingredients
- Combine and chill for 1 hour
Serve at room temperature
