2 small cans corn 1 can hearts of palm 1 avocado 1 tomato 1 lemon Flat leaf parsley Extra virgin olive oil
- Rinse corn and place in bowl. - Rinse hearts of palm, slice and add to bowl. - Chop avocado, tomato and parsley, and add to bowl. - Add juice of lemon, half cup of olive oil and salt to taste. - Stir well. Let sit for at least one hour. - Serve chilled or at room temperature.
