Turn Oven on to 425º and then wash potatoes. If you have foil wrap in foil. Then place potatoes evenly in oven on rack. If you don't want potatoes to explode poke with a fork one time (I learned the hard way!) Cook until you can squeeze them with a potato mitt and then take out of oven, turn oven off and serve with butter, sour cream, salt, pepper and chives if so desired or you remembered at the grocery store!

So I was a married lady of maybe 2 weeks all alone off in Laurel, Maryland and my sweet handsome Army Pilot of a hubby says, "I really want a baked potato!" I called my Mom and she said that she didn't make them cause she lived in Florida and it was too hot to turn the oven on for an hour so then I had to call Dotty Green, (wife of a fellow pilot) and when she eventually stopped laughing 15 minutes later she related this incredible bit of recipe lore on to me. She then told me to call back for the recipe to make a mashed potato as she needed a cocktail. Love to Mom and Dotty Greene!
