1 Tbsp. olive oil
4 boneless pork chops
1 onion, chopped
2 medium sweet potatoes, peeled and cut up
About 1/2 small cabbage, chopped up
4 medium tomatoes, chopped
2 carrots, sliced
1/2 cup brown rice, uncooked
1 cup chicken broth
Salt
Pepper

Directions:
Directions:
Brown pork chops in olive oil with onions. Add all other ingredients in a casserole dish except pork chops. Put the pork chops on top of mixture and cover. Cook for 1 hour at 400-degrees or until liquid is absorbed and rice is tender.
